Job Description

Accor S.A. is a French multinational hospitality company that owns, manages and franchises hotels, resorts and vacation properties

Chef De Partie

Key Responsibilities:

  • Prepare and service all cold food items (salads, dressings, canapés, terrines, cold starters, etc.) for à la carte and buffet menus in accordance with hotel recipes and standards.
  • Ensure the cold kitchen operates efficiently and consistently meets food quality, portioning, and presentation standards.
  • Maintain proper rotation, labeling, and storage of all cold kitchen items to reduce waste and ensure freshness.
  • Conduct the cold section and ensure readiness for service.
  • Liaise daily with Outlet Chefs and other sections to coordinate production and receive feedback.
  • Monitor stock levels and place accurate and timely requisitions from the storeroom.
  • Maintain the cleanliness, hygiene, and organization of all cold kitchen work areas, tools, and equipment.
  • Adhere strictly to kitchen SOPs, food safety standards, and sanitation policies (e.g., HACCP).
  • Participate actively in daily briefings and contribute ideas, suggestions, and feedback for menu development and kitchen improvements.
  • Train, guide, and supervise junior staff within the cold kitchen section.

Qualifications

  • Diploma or Degree in Culinary Arts or Hospitality
  • 3–5 years of hands-on kitchen experience in a professional setting
  • Previous experience in a 5 star or Premium hotel in a similar position
  • Ability to work well under pressure in a fast paced environment
  • Ability to work cohesively and collectively as part of a team
  • Excellent planning, organizational skills, communication and interpersonal abilities, with the capacity to interact effectively with guests and staff.
  • Strong problem-solving and decision-making capabilities, with the ability to address challenges proactively and effectively.
