Job Summary: 

We are seeking a skilled and creative Chef de Partie to join the exceptional culinary team at the  renowned restaurant. The Chef de Partie, be responsible for maintaining the high standards of our kitchen, contributing to the creation of innovative dishes, and ensuring an unforgettable dining experience for the discerning guests.

Responsibilities

  • Prepare, cook, and present dishes to the highest standards of taste, texture, and presentation, ensuring adherence to the restaurant’s quality and plating guidelines.
  • Work collaboratively within the kitchen brigade, supporting and assisting colleagues when necessary, and ensuring effective communication with team members and other departments.
  • Oversee a specific section of the kitchen, such as sauces, grill, pastry, or seafood, and take responsibility for its organization, cleanliness, and smooth operation during service.
  • Execute mise en place tasks efficiently, ensuring all ingredients are prepped and ready for service to minimize delays and maintain consistency.
  • Collaborate with the Executive Chef and Sous Chef to create new and seasonal menu items, incorporating local ingredients and innovative techniques while staying true to the restaurant’s concept.
  • Assist in controlling food costs by minimizing wastage, accurately portioning ingredients, and following established recipes and portion sizes.
  • Maintain a safe and hygienic work environment, following all health and safety regulations, and adhering to proper sanitation practices.
  • Train, mentor, and supervise junior kitchen staff, providing guidance, feedback, and support to ensure their professional growth and performance improvement.
  • Contribute to menu development, plate presentation, and the continuous improvement of kitchen operations, suggesting creative ideas and improvements.
  • Participate in regular kitchen meetings, discussing menu changes, service issues, and providing input on kitchen-related matters.

Qualification & Experience

Education

  • Culinary diploma or degree from a reputable culinary institute is preferred.

Experience

  • Proven experience as a Chef de Partie or similar role in a fine dining restaurant or upscale culinary establishment.

Knowledge, skills and abilities

  • Strong knowledge of various cooking techniques, culinary trends, and a passion for experimenting with new flavors and ingredients.
  • Exceptional attention to detail, creativity, and the ability to work well under pressure in a fast-paced environment.
  • Strong organizational and leadership skills, with the ability to effectively manage a kitchen section and supervise junior staff.
  • Excellent communication and interpersonal skills, promoting a positive and collaborative work environment.
  • Familiarity with local Kenyan ingredients and a commitment to incorporating them into the menu whenever possible.
  • Knowledge of food safety and sanitation regulations, and a commitment to maintaining a clean and safe kitchen environment.
  • Flexibility to work various shifts, including weekends and holidays, in accordance with the restaurant’s operating hours.
