Job Description

Beyond the bustle of Kenya’s most cosmopolitan metropolis, experience a haven of elegance and calm nestled among lush gardens at the edge of Nairobi’s Central Park. Our Nairobi hotel merges business and leisure, art and gastronomy and five-star style and service.

Job Purpose:

The Cost Controller will be responsible for analysing hotel’s operational costs and producing accurate and timely reports on costs and inventory management that assist in timely decision making while ensuring set controls are adhered to.

Key Responsibilities:

  • Compile list of slow or non-moving items every month and share with concerned departments for action to prevent spoilage.
  • Check and enforce adherence to receiving and issuing procedures.
  • Verify invoices to ensure competitive pricing.
  • Collaborate with HODs to strategize on ways of reducing costs.
  • Prepare bi-monthly expenditure/cost reports for each cost centre/departments.
  • Ensure all food requisitions are timely and correctly authorized.
  • Ensure daily food cost report is prepared accurately, investigate high costs and report.
  • Ensure daily beverage cost report is produced and cause of any variance captured.
  • Follow up to find out if shortages have been recovered or explained.
  • Ensure daily stocktaking in the bar.
  • Ensure all beverage requisitions are correctly authorized.
  • Ensure end month physical stock counts are done as required and reconciliations done in a timely and accurate manner.
  • Costing all new menus.
  • Updating costs of existing menus and advice on selling prices.
  • Monitor cost control procedures of employee meals.
  • Prepare stock inventories (potential vs. actual) for all the stores.
  • Ensure all invoices are correctly posted in MC.
  • Ensure sales are posted out daily and accurately.
  • Ensure monthly reconciliation between MC and RA / MICROS is done.
  • Investigate and resolve MC and RA /MICROS deviations.

Requirements:

  • Bachelor’s degree in business related field.
  • CPA (K).
  • Ability to manipulate large volumes of data to generate desired results.
  • Conversant with F&B Controls in a hotel environment.
  • Working knowledge in MC, OPERA, Micros & SUN.
  • Good understanding of hotel operations especially stores & receiving procedures.
  • Conversant with Tax and legal changes in the country.
  • Strong work ethics and self-discipline.
  • Minimum working experience of three (3) years in a hotel with at lest one year in F&B Controls.
